Avocado Feta Tomato Salad

Prep Time: 20 minutes

Ingredients:

2 cups chopped tomatoes

1 Haas avocado, cubed

½ cup feta cheese

1 tablespoon red wine or rice wine vinegar

Juice of half a small lemon

Fresh ground pepper to taste

Preparation:
Mix all ingredients together. Cover and let sit in refrigerator for 15 minutes to enhance the flavors.
